Mexico’ Coffee Overview.
Coffee is a strategic crop in Mexico, cultivated across approximately 750,000 hectares and supporting the livelihoods of over 515,000 producers in 15 states and nearly 500 municipalities.
Among them, at least 310,000 are smallholder farmers cultivating plots of just one to three hectares. Remarkably, 85% of these producers belong to indigenous communities, and a significant portion of the coffee grown is certified organic.
Mexico has cultivated Arabica coffee for over 200 years, earning international prestige for its high-quality production. The primary coffee-producing states — Chiapas, Veracruz, Puebla, and Oaxaca — together account for nearly 90% of national output. Notably, three of these states have received official recognition through Appellation of Origin and Geographical Indications, reflecting the cultural and environmental uniqueness of their coffee-growing regions.
Mexico ranks among the Top 10 coffee-producing countries in the world, with an annual output of approximately 4.5 million 60-kg bags.
In addition, Mexico proudly holds a place among the Top 3 global producers of organic coffee, reinforcing its commitment to environmentally conscious agriculture.
Over 90% of the coffee grown in Mexico is Arabica, with the remaining percentage being Robusta. Arabica thrives under shade, growing in harmony with fruit trees and diverse plant species, which fosters biodiversity and sustainable farming practices. In contrast, Robusta typically requires full sun exposure and is often cultivated in monoculture systems, contributing to deforestation. This distinction underscores Arabica’s role in supporting both environmental preservation and high-quality coffee cultivation in Mexico.

Coffee in Mexico is cultivated on a variety of land types, including fincas, communal lands, and private estates, with private lands being the most extensive. Land ownership is distributed as follows: ejidatarios hold 39%, smallholders 35%, comuneros 21%, and usufructuary tenants and those with indefinite tenure comprise 4%.

An excellent example of Mexico’s diverse coffee profiles can be found in the State of Veracruz, where coffee cultivation benefits from a unique combination of rich volcanic soils, a consistently humid climate, and cloudy winters. These factors contribute to the coffee’s signature high acidity, intense aroma, spicy flavor, and notable body—hallmarks of Veracruz’s distinctive coffee.
Similarly, in the State of Chiapas, coffee is grown on volcanic soils at high altitudes, which impart vibrant acidity, pronounced intensity, full body, and bright fruity notes. Together, these regional characteristics highlight the exceptional diversity and quality of Mexican coffee.
In contrast, the coffee produced in the State of Oaxaca offers distinctive varieties that often stand perfectly on their own, without the need for blending. These coffees are characterized by balanced acidity, complex aromas, and flavor notes ranging from rich chocolate to bright citrus. In certain regions, the beans develop a unique hazelnut hue, which is also reflected in the cup, adding to their exceptional appeal.
Finally, the State of Puebla is renowned for its coffee production in the northern region, where unique climatic conditions favor both high quality and organic cultivation. With 688 registered coffee varieties, Puebla offers an impressive diversity of sensory profiles, making it a significant contributor to Mexico’s rich coffee heritage.

In 1987, Mexico ranked as the fourth largest coffee producer globally, but by 2017, it had fallen to the 11th position. Today, Mexico holds the 9th place, contributing approximately 3% of the world’s coffee production and exporting to over 42 countries.
